Preheat the oven to 170C and line a loaf tin.In a mixer bowl, add the liquid coconut oil and rapadura sugar. Using the beater attachment, beat the two together for approximately 5 minutes, they should have formed a nice ?cream?.Then, one at a time, add a room temperature egg, beating each for 2 minutes before adding the next.In a separate bowl, add all the dry ingredients: the flour, cinnamon, chia seeds, baking powder and bi-carb.Add the dry ingredients to the mixer bowl, and mix just until the ingredients incorporate ? do not overbeat at this point.
