3/4 cup light brown sugar (Can use 1/2 C if you prefer it less sweet)
1/4 cup Splenda
1 egg, beaten
1.5 teaspoon vanilla
1 tablespoon dark rum (optional)
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of ground cloves
1 1/2 cup of flour


How Do I Make Rum Banana Bread?

Here is how you make Rum Banana Bread:

Preheat the oven to 350?F. Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugars, egg, vanilla and rum, then add the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4?8 inch loaf pan. Bake for 50 minutes to one hour, or until a tester comes out clean. OR can be made into muffins- bake for 21 minutes (check after 18 and then 20 minutes) until a tester comes out clean. Cool on a rack.You can add nuts of your choice to this; I'm not a nut person myself so I omit them.Makes 1 loaf or 12 muffins.Number of Servings: 12Recipe submitted by SparkPeople user AMBRAKELLY.
