Sift together whole wheat flour, baking powder, baking soda, salt and cinnamon (and any other spices you prefer) and sit aside. In seperate bowl, cream sugar and butter together. Add yogurt and vanilla and mix well. Add egg until just mixed. Next add flour mixture a little bit at a time until just incorporated. Overmixing will cause the bread to be dense and heavy. Mash two bananas and fold them into the batter gently. Spray loaf pan with cooking/baking spray and pour in. Bake at 350 degrees for 30-40 min. or until toothpick in center is clean.Serving Size:?8 loaf slices
