Preheat oven to 350*.In Small bowl, sift together dry ingredients. Set aside. In a Large bowl, cream together Bananas, Sugar, & Applesauce. Add Eggs, & Coconut. Gradually mix dry ingredients into the banana mixture. Pour batter into a well-greased loaf pan. Bake at 350* for 45-50 minutes or until knife inserted in center comes out clean.
