1. Preheat oven to 350 F.2. Place 3 tbsp water, 1/4 tsp baking powder and flax in small container and mix together, set aside. (This is an egg replacement)3. Mix the mashed banana, sugar, and margarine together. Add the flax mixture and prunes - mix well. Set aside.4. In a separate bowl, mix together baking soda, baking powder, salt, hemp and flour. Mix wet and dry ingredients all together!.5. Pour into greased muffin tins, and bake for approximately 20 minutes. I like to mix these by hand using a fork or wooden spoon. It doesn't need much mixing to get a nice muffin, sometimes the hand or stand mixers overblend causing the muffin to be a bit heavy.I tried a whole wheat flour mix (1 cup regular, 1/2 cup WW) and they turned out nice.
