In a small mixing bowl, mash the bananas, then add the soymilk, apple cider vinegar, maple syrup and vanilla extract. Melt the coconut oil in a small pot and add to the wet ingredients. In a larger bowl, mix the dry ingredients (flour, sugar, baking powder and cinnamon), then add the wet ingredients and mix until everything is thoroughly wet. Fold in the walnuts and blueberries and separate the batter into a 12-pieces muffin pan that you previously greased. Cook for 23-27 minutes, until a knife inserted into one of the muffins comes out clean.
