2 tsp lime juice
1 tsp vanilla extract
1/4 C chopped pecans, toasted
1/4 C flaked sweetened coconut

2 tsp butter
2 tsp lime juice
2 tsp dark rum or 1/8 tsp rum extract and 2 tsp water

Here is how you make Jamaican Banana Bread Mini Muffins:

1. Preheat oven to 375 F (or 350 if using a dark pan).2. To prepare muffins, beat 2 T butter and cream cheese at medium speed of a mixer; add Splenda Sugar Blend for Baking, beating well. Add egg; beat well.3. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, baking powder, baking soda, and salt, stirring well. Combine banana and next 5 ingredients, stirring well. Add flour mixture to sugar mixture alternately with banana mixture, beginning and ending with flour mixture; mix after each addition. Stir in 1/4 C chopped pecans and 1/4 C coconut.4. Spoon batter into mini muffin tins that have been sprayed with cooking spray. Bake for 13-14 minutes or until a toothpick inserted in the middle comes out clean. Cool in pan for 10 minutes; remove from pan. Cool on a wire rack.5. To prepare Topping, combine Splenda Brown Sugar Blend and next 3 ingredients in a saucepan; bring to a simmer. Cook 1 minute, stirring constantly. Remove from heat.
