Instructions:1. Prepare ? cup barley in ? cup boiling water (follow package instructions). Our package calls for bringing the barley and water back to a boil, reduce heat and simmer for 50 minutes (make ahead to allow time for cooling). 2. Wash, dry and dice red bell pepper. Set aside.3. Wash and chop green onion tops. Set aside.4. Combine beans, barley, red pepper, and green onions. Set aside. 5. Mix olive oil, Italian seasoning, garlic, and lemon juice for dressing. 6.
