In a large bowl, combine eggs and 3/4 cup sugar. Add warm milk, yeast, and butter. Add flour and knead the dough (add extra flour if dough is too sticky). When dough is smooth, divide into 6 equal balls and let rise, covered, for about 30 minutes. While dough is rising, melt 1/2 cup butter in a pan and add the flour to make a smooth roux. Allow the roux to brown slightly, then remove from heat. Let it cool for about 5 minutes, then add the sugars, nuts, raisins, orange zest, and cinnamon. Mix in well and cool completely before using.After dough has risen for about 30 minutes, roll it out fairly thin and brush with melted butter. Fold dough from top to center and from bottom to center. Brush again, then fold again (top to center, bottom to center). Roll out until the dough is slightly smaller than a cookie sheet. Evenly spread the filling mixture over the dough.Repeat with remaining dough balls.Roll the covered dough like a jelly roll. With a sharp knife, cut the roll into rounds. Press down on the rounds to flatten down to about 3/4 inch, then place on a cookie sheet. Cover and let rise for about 90 minutes.
