1/4 cup (16) kalamata olives
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon dried leaf oregano or 1 tablespoon fresh oregano
2 egg whites
1 cup lowfat buttermilk
3 tablespoons olive oil, divided into 1 tablepoon and 2 tablespoons

Here is how you make Kalamata Olive Bread with Oregano:

Preheat oven to 350 degreas. Saute onions in 1 tablespoon olive oil until translucent. Cool and set aside. Combine dry ingredients in a bowl. Combine wet ingredients. Make a well in the center of the dry ingredients. Add the wet ingredients to the well. Stir together just until moistened. Fold in onions and olives. Spread battter in loaf pan (8x4) sprayed with cooking spray. Bake at 350 degrees for 45 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in the pan.
