7 T ground flax meal
1 T Chia Seeds
1/2 c uncooked oats
1 cup whole wheat flour

Here is how you make Low Glycemic bread:

Cook quinoa according to package, allow to cool to room temp. Combine yeast, honey and water. Stir well and allow to sit for 20min. Add rest of ingredients minus flour to a food processor. Pulse until consistency of flour, add to yeast mixture. Stir well. Blend cooked quinoa in food processor until smooth, and add to rest of ingredients. Combine well. Gradually add in just enough wheat flour to make a tacky but firm dough. Turn onto floured surface and knead for about 10 minutes until some elasticity is noticed. Return to bowl, cover with damn towel and allow to rise in warm area until doubled in size(about an hour and a half). Knead slightly to remove any major air bubbles and form into loaf, place in lightly oiled bread pan and allow to rise for another 30 minutes. Bake at 400 Degrees F until golden brown on top. Cool, slice and enjoy.Serving Size:?Makes about 12 slices
