Makes 12 slices.Preheat oven to 350F. Grease bottom of a 9" x 5" x 2" loaf pan.Combine flax seeds and water in a blender to make an egg-like mixture. Blend oil, applesauce, milk, vanilla and flax mixture in a large bowl. Add sugar & Splenda.Whisk together the flours, baking soda and powder, salt and spices. Stir into the wet ingredients just enough to moisten. Fold in vegetables and walnuts.Scrape mixture into loaf pan and bake approximately 70 minutes, until a toothpick inserted into the center of loaf comes out clean. Cool in pan five minutes.
