Here is how you make Zucchini Bread Revised:

Preheat oven to 325 degrees F. Grease and flour 2 9X5 inch loaf pans. In a large bowl beat eggs until light and frothy. Mix in oil, applesauce, and sugar. Stir in zucchini and vanilla. In a medium bowl, combine flour cinnamon, baking powder, baking soda, salt, and nutmeg. Stir into the egg mixture. Divide batter into prepared pans. Bake for 60-70 minutes or until done.
