I just sort of made this up with things I had on hand and it turned out delicious. My girlfriend tried it and loved it, too. Great way to use those huge, ginormous zucchinis that get away from you in the garden.

1/2 HUGE zucchini from the garden (not the size you buy in the store)
1 Tbsp. low fat cream cheese
2 slices of deli ham
Fresh cilantro, to taste
1 cup alfalfa sprouts
cumin to taste
black pepper to taste


How Do I Make Zucchini Sandwich (but without bread!)?

Here is how you make Zucchini Sandwich (but without bread!):

Mix cream cheese, cumin and black pepper in a bowl and set aside.Use a cheese slicer to take off the first layer on one long side of a HUGE zucchini. Discard the first slice because it's mostly all skin. Then make four more slices with the cheese slicer. On two of the zucchini slices, spread the cream cheese mixture evenly. Layer cilantro (as much or as little as you like) onto the cream cheese. Next cut the ham slices in half the long way (if there is a long way) and layer over the cilantro (two half slices per zucchini slice). Next add 1/2 cup sprouts to each zucchini slice. Top off with the remaining untouched zucchini slices. Cut into bite-sized pieces and enjoy!!!Note: I ate this as a pre-workout snack. But I think this would make a wonderful appetizer cut into little pieces with toothpicks to hold each "sandwich" together.
