Oatmeal, old fashioned -7.5 ounces
All purpose flour - 1 .25 lbs.
Baking soda 1 tbs.
Baking powder 1 tsp.
Cinnammon - 1 tbs.
Canola oil - 1 fl.oz
Pureed prunes 4 oz. (the recipe used canned pitted prunes, juice packed.)
Egg substitute - 2 fl. oz.
Applesauce, unsweetened 4 fl. oz.
Walnut pieces 1.25 oz.
Dried cranberries (I used craisins in the nutritional value) 1.5 oz
Raisins 4.5. oz.


How Do I Make Nutritious Breakfast Cookie?

Here is how you make Nutritious Breakfast Cookie:

In large bowl mix brown sugar, oatmeal, flour, baking soda, baking powder and cinnammon. In another bowl, whisk together oil, egg substitute, prune puree and applesauce. Fold into dry ingredients. Do not overmix. Fold in raisin, cranberries and walnuts. Use ice cream scoop (will make about 22 cookies) 6 cookies on a parchment lined cookie sheet. Flatten cookies to about 1/4 " height. Cook for 15 minutes in 350 degree oven. DO NOT OVERCOOK. Cookie should remain underdone, but slightly brown. Use within 24-48 hours. Can refrigerate dough and only make a few cookies at a time.
