Combine oats, protein powder, carrots, apple, sunflower seeds, walnuts, cinnamon, and salt. In a separate bowl whisk egg, oil, honey, sugar (optional) and vanilla until blended. Pour liquid mixture over dry ingredients and mix until thoroughly combined. Spoon mixture into pan, press firmly into an even layer. Bake at 375 for about 25-30 minutes until lightly browned around the edges and firm to touch. Let cool completely in the pan. Using the foil overhang as handles, remove from pan and transfer to a cutting board. Cut into bars. Store covered in the refrigerator.
