Here is how you make Carrot Hummus:

1. In a small covered sauce pan cook carrots in small amount of boiling water for 6-8 minutes or until tender. 2. In a food processor combine cooked, drained carrots, garbonzo beans, tahini, lemon juice, garlic, cumin and salt3. Cover and process until mixture is smooth. Add reserced liquid from beans, water, or chicken broth to attain desired consistency. Stire in parsley.4. Cover and chill for at least 1 hour or for up to 3 days. Serve with assorted dippers.
