16oz boneless skinless chicken breast halves
MARINADE:
1 large orange juiced
1 lime, juiced
1 small can pineapple juice
4 cloves garlic, chopped
2 tbsp rosemary leaves
1 bay leaf
8 slices Weight Watchers® pepper jack cheese
2 cups of Aaaaavocado Guacamole
2 ripe tomatoes, sliced into 16 slices (2 per sandwich)
4 cups finely shredded lettuce

Here is how you make Chicken Cibolo:

Mix all ingredients together in a zip-top bag, except cheese, bread, lettuce, avocado and tomato. Marinate in fridge several hours or overnight. After marinating, grill over moderately hot coals until cooked through and no pink is left in chicken breast. Before removing from grill, place a slice of cheese on each breast. At this time spray baguette slices lightly with butter flavored pan and toast the top side lightly. Flip the baguette and place the chicken onto the bread. Top with tomato slices and avocado slices.
