Sometimes a raisin just doesn't cut it for me and I have to have something richer in flavor and texture. I took Coach Nicoles basic recipe, doubled it and added some whole flax seed, semi-sweet chocolate morsels, peanut butter chips, and butterscotch morsels. Doubling the recipe from Coach Nicole's original allowed me to use a 9 x 13 pan.I made the "oat flour" in a blender since we vowed that we would not buy a food processor until our blender quit working. We've been waiting 16 years for that blender to kick the bucket. The blender works just fine - even for grinding rolled oats into "flour".These are good but when I make them again I will probably do either the peanut butter chips and chocolate or the butterscotch and chocolate. I find the peanut butter and butterscotch too confusing for my tastebuds. The flaxseed is definitely something I will keep in this recipe in the future.

4 cups rolled oats
2 cups quick oats
1 tsp ground cinnamon
1/4 tsp salt
1/2 cup raw almonds
3 Tblsp canola oil
2/3 cup pure maple syrup
1/2 cup honey
1/2 cup vanilla flavored almond milk
1/2 cup shredded coconut
non-stick cooking spray

1/4 cup whole flax seeds
1/4 cup Reeses peanut butter chips
1/4 cup Nestle's Tollhouse semi-sweet chocolate morsels
1/4 cup butterscotch morsels

Here is how you make Chocolate-PB-Butterscotch Granola Bars:

Pre-heat the oven to 350.Process the rolled oats (not the quick oats) in your blender or food processor until they become flour-like. Mix this "oat flour" mixture with the ground cinnamon first so that you can spread the cinnamon througout the "flour" somewhat uniformly.Set aside the coconut and in a large mixing bowl, add all the other dry ingredients to the "flour" mixture until all dry ingredients are uniformly incorporated.In a separate bowl, combine the wet ingredients and mix well by hand. Add the wet mixture to the bowl with dry ingredients and stir until well combined.Spray the bottom and sides of a 9 x 13 baking pan or dish with non-stick cooking spray. Add the granola bar mix to the baking pan. With a sandwich bag that fits over your hand, a spatula, or a peice of hand-sized wax paper, press the mixture down into the baking pan or dish evenly. Spread the coconut evenly on top and lightly press onto the top of the granola mixture.With a knife or pizza cutter, cut the whole sheet into 24 bars.Bake at 350 for 15-20 minutes. Let cool, cut again. When completely cool move to storage containers. I suggest storing in the refrigerator or freezer in air-tight containers. I believe the oil in the flaxseeds makes these bars slightly more prone to spoilage if not preserved in either a refrigerator or freezer.Serving Size:?24 - bars from a 9 x 13 pan
