Original Fiber One Cereal2 c. hot water 1/2 c. unsweetened cocoa powder 3/4 c. whole wheat flour 1/4 tsp. baking soda 1/4 tsp. salt 1 tbsp. baking powder 1 1/4 c. raw sugar (or granulated white sugar) 1 tsp. vanilla extract 2 egg whites (or 1/4 c. egg beaters) 2/3 c. mini chocolate chips 1/4 c. sliced almonds (optional) How Do I Make Chocolate Fiber Muffins?Here is how you make Chocolate Fiber Muffins: Preheat oven to 350 degrees. Line 24 muffin cups with paper liners. Spray lightly with nonstick spray.Put Fiber One cereal in a medium size bowl. Pour 2 c. hot water over cereal, making sure all the cereal is wet (press it down with your hands if necessary). Set aside to soak (at least 5 minutes).Mix all the dry ingredients (cocoa powder, wheat flour, baking soda, salt, baking powder, sugar) with a wire whisk in a large bowl. Add the soaked cereal, egg whites, and vanilla. Mix very well with a mixer till you can no longer see the shape of the cereal. Add the chocolate chips and mix until incorporated into the batter. Fold in sliced almonds.Spoon batter evenly into muffin pan. I like to use a small ice cream scoop with a trigger for this. Bake for 16-18 minutes or until a toothpick comes out mostly clean.
