Preheat oven to 350. Prepare chia "egg" by mixing 3 T warm water and 1 T chia seed. Set aside to gel. Mix dry ingredients. Add and mix the rest of the ingredients. Line cookie sheets with parchment paper. Scoop and place balls on cookie sheets. Bake 10 min, cool 3 min on pan before moving to rack.
