Soak currants in hot water for about 15 minutes. Drain, but reserve currant water.Toast sunflower seeds and pepitas on a baking sheet until they turn brown, being careful not to burn them. Cool thoroughly.In a large bowl, combine flour, oats, baking powder, and salt. Add currant water to dry mixture, plus canola oil and honey. With a rubber spatula, stir until combined. Add seeds and stir to combine, then add currants and chocolate chips. Don't overmix.Form teaspoon-sized patties on a cookie sheet, preferably lined with parchment paper. (These do not spread at all.) Bake until golden brown, about 12-15 minutes.
