Here is how you make Grandma's Egg White Cookies:

Beat egg white until frothy. Add salt and sugar gradually. Add cream of tartar and vanilla. Beat until stiff peaks form. Fold in chocolate chips. Drop on parchment paper (must be ONLY parchment paper, no cookie sheet) and bake at 275F for 45 minutes. **Special directions.... Turn off oven and leave to cool for 3-4 hours or overnight.
