A sugarless oatmeal cookie that tastes a lot like the delicious oatmeal cookies my mother used to make but hers had a large amount of butter in them. I use a small amount on butter just to give a hint of butter taste but you can use canola oil instead of the butter if you prefer. Melt butter and add to dry ingredients together with oil and applesauce. Mix until the mixture sticks together. Spray a square cake tin with non-stick spray. Put mixture into pan and pat down so that there are no cracks. Bake at 350 degrees for 20 minutes or until light brown. Cut while hot but cool completely before removing from pan. I keep them in the freezer so that they stay crispy. Just keep them out of the freezer for a few minutes before eating.Additions/Changes: for variety, I sometimes substitute coconut for the almonds or I use 1/4 cup chopped almonds and 1/4 cup raisins and I add a tsp. of cinnamon.
