What Are The Ingredients For Ethel's Date Roll Cookies Recipe?The ingredients for Ethel's Date Roll Cookies are: 2 1/4 Cups Dates (1 lb) pitted and chopped1 Cup White Sugar 1 Cup Water 1 Cup Shortening 2 Cups Brown Sugar 3 eggs 4 Cups Flour 1/2 Tsp Salt 1/2 Tsp Baking Soda How Do I Make Ethel's Date Roll Cookies?Here is how you make Ethel's Date Roll Cookies: Cook 10 minutes over low heat the chopped dates, white sugar and water. In a bowl, blend together shortening, brown sugar and eggs. Add flour salt & baking soda.Chill dough for a few minutes. This dough gets soft quickly in warm weather and is difficult to roll out (it gets very sticky)Remove dough from refrigerator and divide into 3 balls. Return 2 of the balls to the refrigerator. Roll out the remaining ball on a lightly floured surface into a rectangle. Spread 1/3 cooled date mixture on dough. Roll dough into a log. Wrap in saran wrap and place in the freezer. Get the next ball of dough from the refrigerator and repeat until you have 3 logs of dough in your freezer. The dough can be frozen for weeks. To bake, preheat oven to 350 degrees. Slice dough into 3/8" slices and place on cookie sheet. Bake for 10 minutes. You can slice and bake as many cookies as you need, and return the unused portion back to the freezer securely wrapped. The entire recipe should make approximately 72 cookies.
