4 large beets, peeled and very finely shredded
1/2 C honey
juice from 2 lemons
4 sprigs fresh mint (optional)

I used the qt water, a bunch of beets from the farm down the road (equal to about 5 medium beets - I also forgot to peel them, so I grated them till I ran into the skin and tossed it. I also did most of them in the blender as I got tired of grating them), 1/4 C honey, the lemon juice and no mint.
