Here is how you make Healthy Egg White Omelet:

Warm a small skillet on medium heat and spray with "0" fat cooking spray.While the skillet is warming, crack and separate egg whites and yolks. Discard the shells and yolks. Keep egg whltes in a small bowl until needed. Thaw a few broccoli florets in the microwave. Twenty seconds in a microwave safe dish with a vented lid should be sufficient. Once thawed, chop broccoli and place in a small bowl. Frozen broccoli florets will not heat through sufficiently in the omelet to be warmed through.Slice/chop fresh mushrooms and add to the small bowl with the broccoli. Add onions, bacon bits, and cheddar. Stir the ingredients together. Set aside.Once skillet is heated, pour eggs into the skillet. Make sure that eggs cover the entire bottom surface of the skillet. Add the bowl of bacon bits, onion, broccoli, mushrooms, and cheddar, spreading the ingredients over the surface of the eggs. Spray the tip of a spatula with the cooking spray and periodically run the edge of the spatula underneath the eggs as they begin to cook. As the eggs cook, they will turn white. As the eggs continue to cook, the surface will become whiter and harder to see through. As this begins to happen, gently place your spatula underneath one side of the eggs and carefully fold the egg "circle" in half, making a semi circle shape. Allow the omelet to cook a bit longer, periodically turning the semi-circle over in the pan.Once the outside surface is lightly browned on both sides and there is no uncooked,"see through" eggs visible or leaking from the edges or middle of the omelet, remove the omelet from the heat and place on a plate to serve.For safety reasons, eggs should be cooked for immediate service to an internal temperature of 145 degrees. If you are unsure as to whether your eggs are cooked fully and you have a kitchen thermometer close, insert the tip of the thermometer into the eggs at the thickest point. For an accurate reading, make sure that the tip of the thermometer does not touch the bottom of the skillet.
