Here is how you make Egg White Snacks:

In a pan, sautee vegetables(mushrooms, onions, spinach) in the tablespoon of olive oil until soft. Let vegetables cool. Whisk together the egg whites, whole egg, and milk. Mix in the cooled vegetables. Grease muffin tin with non stick spray or brush with olive oil. Fill medium sized muffin tin (approximately 10 servings) half way with mixture. Sprinkle with parmesan and bake for approximately 35 minutes or until no longer soft.
