Roughly chop the onion, pepper, and garlic and blend in food processor or blender with the lemon juice, olive oil, balsamic vinegar and salt with enough water to form a paste. In a large mixing bowl, combine the veggie paste with the soaked flax seeds, nutritional yeast, and pumpkin seeds. Add additional salt to taste.Spread thinly on teflex or parchment paper. Set dehydrator at 110 degrees and dry for 6-8 hours or until set. Flip onto trays and remove paper.Allow to dry for another 8-12 hours or until completely dry.
