My kids LOVE these tasty, chewy granola bars and beg me to make them. They pack well and can be easily adapted to suit your tastes. Any dried fruit can be used. I find prunes add a real richness to them, but dried apricots, peaches, cranberries, blueberries and cherries are all very nice in these. You can also add nuts, chocolate chips and/or coconut - but my family doesn't miss them in this lower calorie version.

2 cups dried fruit (diced)
1 cup sunflower seeds
1/4 cup margarine
1/2 cup peanut butter
35 regular marshmallows

Here is how you make Chewy Granola Energy Bars with Dried Fruit:

Line a 9X13 pan with wax paper or spray with cooking spray.In a 350 degree oven - toast sunflower seeds until fragrant. Also toast oatmeal, Rice Krispies and raisins for 5-10 min (optional).Combine oatmeal, rice cereal, raisins, dried fruit, and sunflower seeds. Mix well and set aside.In a large stovetop pan (dutch oven) - melt margarine, peanut butter and marshmallows over low heat - stirring till smooth.Add oatmeal mixutre and stir with a spatula.Firmly press into pan. (I find a potato masher rinsed in hot water works really well for this).Once cool - flip pan over onto a cutting surface. Remove wax paper if used.Cut into 1 X 3 inch bars (39 pieces).I have made many variations on these - using whatever is on hand.
