Spray an 8 inch nonstick skillet.2. Slice apple into very thin slices. Saute with a little Splenda, or just leave them plain.3. While the apples are cooking, whisk egg with a little water, then whisk in matzo meal. Add a little water as needed to get desired consistency. You should be able to pour it but it should not be very watery.4. When the apples are wilted and a little brown (don't burn them! still delicious if you do though), spread them out in an even layer on the bottom of the skillet, then pour batter over, completely coating the fruit.5. Cover and let cook for about 5-7 minutes. Keep on eye on it because the sugar in the fruit can burn, but I like the little crispy bits. If you're feeling brave, you can flip it, but it should cook all the way through if you leave it covered on low-med heat.Variations: I tried it with bananas, although it did not come out of the pan as easily. Any fruit could work though!I also like to spread a bit of low fat cream cheese on it and sprinkle it with cinnamon-splenda.
