1 c rolled oats
1/2 c raw unsalted sunflower seeds
1/2 c wheat germ
1/4 c whole wheat pastry flour
1/2 c dried apricots
1/2 c raisins
1/2 c raw almonds
1 small ripe banana
1 c plain soy yogurt or 8 oz. soft silken tofu
1/2 t ground cinnamon
1/2 t nutmeg
1/3 c pure maple syrup or agave nectar
1 tsp vanilla
2 T ground flax
6 T warm water


How Do I Make Vegan Fruit and Nut Power Bars?

Here is how you make Vegan Fruit and Nut Power Bars:

Preheat oven to 350 degrees F. Coat a 9x13-inch pan with cooking spray.Combine ground flax and warm water in a small cup and beat vigorously; set aside.Place oats, sunflower seeds, wheat germ, flour, apricots and raisins in a food processor and pulse until coarsely chopped. Add banana, yogurt or tofu, cinnamon, nutmeg, syrup, ground flax mixture, and vanilla; pulse 8-10 times until mixture is well combined. Mixture will be sticky.Transfer mixture to baking pan and spread evenly using the back of a spatula sprayed with cooking spray.Bake just until done, 15-18 minutes. Remove from oven and allow to set, about 5 minutes.
