Makes about 10, 8oz cups.Clean and slice rhubarb lengthwise. Chop each into 3" pieces. To saucepot, add cold water, chopped rhubarb, and ginger. Bring to a boil. Cover, reduce heat to a simmer, and cook for 1 hour.Remove from heat, allow to cool for 15-20 minutes. Strain tea using cheese cloth. Drop in tea bags, cover and allow to steep for 10-20 minutes. Pull tea bags and discard them. Stir in Truvia or other sweetner of choice and cool completely.
