How Do I Make Soft and chewy granola bars?

Here is how you make Soft and chewy granola bars:

Preheat oven to 350F. Line an 8" or 9" square baking tin with aluminum foil and grease with butter or oil. Coarsely chop almonds and place on a large baking sheet along with oats and flaked coconut. Toast these for eight (8) minutes. Meanwhile place honey, brown sugar and coconut oil in a saucepan and bring to the boil over medium heat for a few minutes, stirring frequently, until brown sugar is dissolved. Remove from heat and allow to cool for a few minutes. Place dates and raisins in large mixing bowl. Add oats, almonds and flaked coconut and stir to combine. Add the cooled sugar/honey/coconut oil mixture and stir well to combine. After a minute or so add most of the mini chocolate chips. They will melt but that is fine as it helps to keep the bars from crumbling. Once the mini chips are distributed evenly into the mixture, pour this into the prepared baking tin and spread evenly to all corners and edges. Using a flat spatula spend a full minute pressing the mixture down into the pan. Don't skip that part! Now sprinkle the remaining mini chips on top of the bars then press them down slightly.
