2.5 cups mixed nuts
1 cup dried fruit
2 cups unsweetened, shredded coconut
1/2 cup honey or agave nectar
1/4 cup coconut oil
splash of vanilla
generous amount of cinnamon
1/4 tsp salt


How Do I Make Nutty Granola Bar?

Here is how you make Nutty Granola Bar:

Take 1 cup of mixed nuts and chop into smaller, but various sized pieces (rough chop). Pour other 1.5 cups of nuts into food processor or blender and process until broken into smaller pieces. Pour all nuts into bowl, add dried fruit, and mix. Add Coconut and mix. In a small saucepan, heat honey/nectar, oil, vanilla, salt, and cinnamon until bubbly (agave nectar will not bubble like the honey, so look for some bubbles but everything heated through). As soon as sweet mixture is bubbling, pour over nut mixture. Mix until thoroughly combined. Dump into baking dish of some sort, press down hard until flat and tight (use parchment paper to keep from sticking to hands). Freeze/cool for 2-3 hours. Cut into granola bar sized pieces.
