Be careful! The oats burn quickly if left unattended. Line a cookie sheet with parchment (waxed) paper. When the oats are toasted spread them on the parchment paper to cool. In the same pan combine the butter, sugar, honey and vanilla over low-medium heat. Stir frequently until a thick bubbly sauce has formed (should happen fairly quickly). Sprinkle some cinnamon, nutmeg and any other spices you may want to add into the sauce and stir well. Remove sauce from heat and pour over oats. Stir to combine, then let cool on the parchment paper-lined cookie sheet.
