1 cup unsweetened coconut
1/2 cup maple syrup

1 1/2 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon almond extract
1 cup craisins ( dried cranberries)

Here is how you make Vanilla Maple Granola:

Preheat oven to 250F Lightly grease 2 cookie sheets or line with parchment paper.In a dutch oven heat maple syrup,brown sugar,water and honey. When the sugar is melted remove from heat and stir in vanilla extract, almond extract and cinnamon. Stir in the rest of the ingredients except craisins. Spread on the prepared pans bake for 60 minutes stirring every 20 minutes. Mix in craisins , cool and store in an airtight container at room temperature.
