Combine all the dry ingredients in a large bowl. Add the oil and mix well with a fork.Pour in the water and mix. Add additional water a tablespoon at a time until the dough is soft and workable.Pour the dough onto a lightly floured surface and knead a minimum of 10 minutes (longer is better). Allow dough to rest a few minutes.Preheat the oven to 400 degrees F. Pinch off a golf ball-sized lump and roll it into a ball. Use a floured rolling pin to roll out as thin as possible without the dough tearing. Cut into 1.5 x 1.5 inch squares and transfer to an ungreased cookie sheet. Continue this until the sheet is full. Bake 6.5 to 10 minutes, flip and continue baking another 6.5 to 10 minutes until evenly browned on both sides. Cool completely .
