Making Yogurt in the Donvier Yogurt MakerNote: Your Donvier Yogurt Maker comes with a recipe for 1 qt. of yogurt. This fills the yogurt jars half way and allows room to add fruit and flavorings. Recipe can be doubled to 2 qts. if desired, which will fill the yogurt jars completely.Ingredients1 quart (.95L) milk (whole, 2%,1%, skim or powdered). If using skim milk, stir 1/4 cup (50 ml) of instant skim milk powder into cold milk before heating. If making milk from skim milk powder, add an additional 1/3 cup (75 ml) of skim milk powder to water. 1 or 2 heaping tablespoons (15 - 30 ml) of plain commercial or homemade yogurt with live active cultures or 1 envelope (5 grams) of freeze dried yogurt starter. Pour milk into a two quart (1.9L) saucepan or 4 cup (1L) glass measuring cup. Heat milk on medium-low, stirring occasionally, until bubbles appear around edge and steam rises from the surface. Or microwave on HIGH until milk is steaming hot, stirring occassionally, about 8-10 minutes. Temperature of milk should be 185°F to 190°F (85°C - 88°C). Remove saucepan from heat insert thermometer stirrer. Let milk cool until it reaches the "Add Starter" temperature level on the thermometer at 110°F to 115°F (43°C - 46°C). Note: if using the Yogourmet CBA Yogurt Starter, the milk must be cooled to 73°F. When using raw milk, boil for several minutes before you cool to the "Add Starter" temperature level. Add 1 or 2 heaping tablespoons of yogurt starter or empty one envelope (5 grams) of yogurt starter into one of the yogurt jars. Add some of the heated milk and stir until well blended. Do not add any flavorings or sweeteners before completing the yogurt making process. Pour this mixture back into the saucepan and stir well. Pour the mixed liquid equally into yogurt jars, cover securely with lids and place jars into the yogurt maker. Place the unit cover on the heater base. Plug in the electric cord, the digital display will illuminate and display "00.01". Press the MINUTE SET button until desired minute number appears, then press the HOUR SET button until desired hour number appears. For the first batch, try setting the cooking cycle to 10 hrs. Note: if using the Yogourmet CBA Yogurt Starter, the incubation period will be 12-15 hrs. For future batches, set to longer cycle for a thicker consistency or to a shorter cycle for a thinner consistency. Press the START button to begin the cooking cycle. The ON indicator will illuminate to indicate unit is operating. Ten minutes before the end of the cycle, a reminder tone will sound. Five minutes later, a second reminder tone will sound. The Donvier Yogurt Maker will automatically shut off at the end of the cooking cycle. The on indicator will turn off and the timer will display "0.00". A beeper will sound for one minute to remind you to remove the jars and place them in the refrigerator. Yogurt must be chilled 3-4 hours before sercving.
