2 lbs. London Broil
3/4 c. Low (or less) Sodium Soy Sauce
1/4 c. Worcestershire Sauce
1 tsp. Liquid Smoke
1 tsp. Onion Powder
1 tsp. Garlic Powder
1 tsp. Black Pepper
1 tsp. Meat Tenderizer
Red Pepper Flakes to taste (2 "shakes" minimum up to 1 tsp for spicy)

Here is how you make Jessie's Famous Jerky:

Optional- place the london broil in the freezer for 15 minutes to firm the meat. This makes slicing easier.In a one gallon freezer bag, add all ingredients except for london broil. Mix thoroughly.Remove all excess visible fat from the london broil. Slice the london broil to desired thickness ( I recommend 1/8")Place the sliced london broil in the gallon freezer bag with the marinade, making sure to coat all slices. Allow to marinade overnight in the refridgerator. Pre-heat your oven to 150 degrees F, or as low as it will go. Do not go below 150 degrees. OR set up your food dehydrator.If using dehydrator, follow instructions to dehydrate the meat.If using oven- coat cookie sheets with aluminum foil (3-4 will be needed for 2 lbs of meat). Remove slices from gallon bag and place meat on cookie sheets leaving space around each slice. Place cookie sheets in the oven. After 2 hours, turn all slices. Check the meat every 30 minutes after this point. The jerky should be just dark in color and removed from oven. Do not allow to cook too long or jerky will become tough.Remove from oven when done.
