Set oven to 100-150 F.Wash Kale, pat dry (or spin in a salad spinner), and cut center stems out. Tear into large pieces (kale will shrink and crumble some during anf after cooking)Toss Kale with 1 Tbsp olive oil, Parmesan, and Italian Seasoning. Oil 2 standard cookie sheets with cooking spray. Lay kale flat as possible on cookie sheet.
