Clean kale. Tear into pieces, discarding stems as they will become woody when dried. Place olive oil, salt, and any spices in a large bowl. Add 1/4 to 1/3 of the kale. Mix well. Use your hands to "massage" the kale. Spread the kale on a dehydrator sheet. Repeat bit by bit with the remaining kale. Dehydrate at 110 degrees overnight. If you are in a hurry, set at 140 degrees for 1 hour and then lower the temperature if additional time is needed. Check periodically.
