1c unsalted butter
2c all-purpose flour
1 tsp baking powder
1/2 tsp salt
1c sugar
1 egg (large)
2 tsp vanilla
3 1/2 tsp grated lemon zest
1 tbsp poppy seeds (plus extra for sprinkling)
Additional 1/2c sugar

Here is how you make Lemon Poppy Seed Crisps:

Makes about 32 cookiesPreheat oven to 350 degrees F.-Simmer lemon juice until reduced by half. (About 10 min)-Add 1/2c of the butter and melt in. Set aside.-Mix flour, baking powder and salt together in one bowl.-In another bowl, cream remaining 1/2 c butter and 1c of sugar.-Add in egg and lemon-butter. Mix until pale.-Add in vanilla and 2 tsp of the lemon zest.-Mix in flour mixture and poppy seeds.-Mix together an additional 1/2c of sugar and remaining 1 1/2 tsp lemon zest in a shallow dish or pie plate.-Roll dough into 1 inch balls and roll in sugar/zest mixture.-Place on cookie sheet 2 inches apart and press with bottom of a flat glass to 1/4 inch thickness.-Sprinkle with additional poppy seeds.-Bake for 12-14 min until edges are golden.
