Reduce heat and simmer for 20 minutes or until tender (al dente). Once cooked, drain lentils and return them to the pot off heat. Season with salt and pepper and 1 tbsp olive oil. Adjust seasoning as needed.While lentils are cooking, heat a skillet over medium heat and add 1 tbsp olive oil and shallots and stir. Cook for a few minutes until shallots are softened. Add garlic and cook for a few minutes more. Remove from heat, but leave ingredients in the skillet.Prepare sauce:Add hummus and lemon juice to a mixing bowl and stir to combine.
