Mix all ingredients together and keep in a jar in the fridge (flax meal and buttermilk powder should be kept cold). For each muffin, spray a coffee or custard cup with cooking spray, mix 1/4 cup of mix with an egg white and 1 tsp oil (included in nutrition counts). Add enough water to make it pour but not too soupy, just a tiny bit. Or you can add mashed banana and applesauce instead of water and oil, or other fruit.
