250g of flour
2tsp baking powder
1tsp bicarbonate of soda
1tsp cinnamon
3 apples - peeled and cored
1 500ml packet of buttermilk

Here is how you make Apple and Almond muffins:

1. Heat oven to 180C2. Line muffin tray with paper cases3. Rub butter and 50g of flour to make fine "breadcrumbs". Add the tbsp of sugar and chopped almonds. Set aside4. Grate 2 apples and beat with buttermilk and egg - you may need less buttermilk so save some and only add it all if mixture is too dry.5. Sift dry ingredients together. Make well in centre and add wet ingredients gently taking care not to overmix.6. Fill cases 2/3 with mix (I have very small cases so this recipe made 18 for me).7.
