Preheat oven to 325*F, spray regular-sized muffin tin with nonstick spray.Beat together eggs, oil, honey, brown sugar, applesauce and vanilla until foamy. On low speed slowly add both flours, baking soda, baking powder, cream of tartar and cinnamon.
