Preheat oven to 350 degrees. Line a 12-cup muffin tin with paper liners.In medium bowl combine flours, cinnamon, baking powder and baking soda. In large bowl combine mashed bananas, honey, apple juice and apple cider vinegar. Mix well.Add the dry ingredients to the wet ingredients and stir to combine. Do not over-stir!Gently fold in zucchini and carrots.Fill muffin cups 3/4 full. Bake for 20 minutes.These freeze well.
