Combine all dry ingredients and mix well. Put eggs and applesauce in a small bowl and whisk together. Add applesauce egg mixture to dry ingredients. Core and dice apple. Wash blueberries and pat dry. Add apples and blueberries to dry ingredients. Mix slowly by hand until combined. Add almond milk and stir until all dry ingredients are moistened. Spray Pam cooking spray in each of 12 muffin cups.
