Stir dry ingredients together in large mixing bowl. In seperate bowl, mix egg, canola oil, milk, and peanut butter until peanut butter is well mixed in; also stir the apples into this mixture - stir really well. Make a well in the dry ingredients, pour in the liquid mix and stir just 'til combined. Batter will be thick. Fill greased muffin cups (I just grease with the Canola oil.). Bake at 400 degrees for 18-20 mins.
